Description
Shish Tawook is a traditional Middle Eastern dish featuring marinated chicken skewers grilled to perfection. Infused with a garlicky yogurt marinade, lemon, and warm spices, it’s flavorful, juicy, and perfect for both weeknight dinners and festive occasions.
Ingredients
- 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into cubes
- 1 cup plain yogurt
- 3 garlic cloves, minced
- 2 tablespoons lemon juice
- 1 tablespoon tomato paste
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper or chili flakes (optional)
- Wooden or metal skewers
- Fresh parsley, chopped (for garnish)
Instructions
- In a bowl, mix together yogurt, lemon juice, garlic, tomato paste, olive oil, paprika, cumin, coriander, salt, pepper, and cayenne (if using) to make the marinade.
- Add the chicken pieces to the marinade and toss to coat evenly.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- If using wooden skewers, soak them in water for 30 minutes before cooking.
- Thread the marinated chicken onto skewers.
- Preheat a grill or grill pan over medium-high heat.
- Grill the skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
- Garnish with chopped fresh parsley and serve hot.
Notes
Marinate overnight for the most flavor and tenderness.Can be baked at 425°F (220°C) for 20–25 minutes, flipping halfway through.Use dairy-free yogurt for a dairy-free version.Add fresh herbs like oregano or thyme for a different twist.Great served with garlic sauce (toum), pita bread, or salad.
