Description

Shish Tawook is a traditional Middle Eastern dish featuring marinated chicken skewers grilled to perfection. Infused with a garlicky yogurt marinade, lemon, and warm spices, it’s flavorful, juicy, and perfect for both weeknight dinners and festive occasions.


Ingredients

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into cubes
  • 1 cup plain yogurt
  • 3 garlic cloves, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper or chili flakes (optional)
  • Wooden or metal skewers
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, mix together yogurt, lemon juice, garlic, tomato paste, olive oil, paprika, cumin, coriander, salt, pepper, and cayenne (if using) to make the marinade.
  2. Add the chicken pieces to the marinade and toss to coat evenly.
  3. Cover and refrigerate for at least 2 hours, preferably overnight.
  4. If using wooden skewers, soak them in water for 30 minutes before cooking.
  5. Thread the marinated chicken onto skewers.
  6. Preheat a grill or grill pan over medium-high heat.
  7. Grill the skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  8. Garnish with chopped fresh parsley and serve hot.

Notes

Marinate overnight for the most flavor and tenderness.Can be baked at 425°F (220°C) for 20–25 minutes, flipping halfway through.Use dairy-free yogurt for a dairy-free version.Add fresh herbs like oregano or thyme for a different twist.Great served with garlic sauce (toum), pita bread, or salad.
