Description

Shortbread with Comté, sesame, and Provençal herbs is a savory twist on the classic buttery shortbread. It combines the rich flavor of Comté cheese, the crunch of sesame seeds, and the fragrant aroma of Provençal herbs, creating a perfect balance of flavors.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups all-purpose flour
  • 1/2 cup Comté cheese, finely grated
  • 1/4 cup sesame seeds, plus extra for garnish
  • 1 tablespoon Provençal herbs (herbes de Provence)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon cold water (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened butter and salt together until smooth and light in texture.
  3. Add the grated Comté cheese, sesame seeds, and Provençal herbs to the butter mixture. Stir until evenly combined.
  4. Gradually add the flour, a little at a time, and mix until a dough starts to form. If the dough is too dry, add cold water a teaspoon at a time until it comes together.
  5. Turn the dough onto a lightly floured surface and roll it out to about 1/4 inch thickness.
  6. Using a cookie cutter, knife, or a pizza cutter, cut the dough into squares or other desired shapes.
  7. Place the cut dough onto the prepared baking sheet and sprinkle a few sesame seeds on top of each piece.
  8. Bake for 12-15 minutes or until the edges are golden and the shortbread is firm to the touch.
  9. Allow the shortbread to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

These shortbread can be stored in an airtight container at room temperature for up to 5 days, or frozen for up to 1 month.For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend that contains xanthan gum.If you prefer, you can use different cheeses like Gruyère, Parmesan, or cheddar to change the flavor profile.Adding finely chopped olives, sun-dried tomatoes, or caramelized onions to the dough can add more flavor and texture.To make these more flavorful, try brushing them with olive oil before baking or sprinkling with sea salt after baking.
