Simple lemon herb chicken is a fresh, flavorful, and healthy dish made with juicy chicken marinated in lemon, garlic, and herbs, then grilled or pan-seared to perfection. Perfect for weeknight dinners, meal prep, or entertaining.
Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp fresh herbs (such as rosemary, thyme, oregano, or parsley) or 2 tsp dried herbs
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- In a bowl, whisk together lemon juice, lemon zest, olive oil, garlic, herbs, salt, and pepper.
- Place the chicken in a resealable bag or shallow dish and pour the marinade over it.
- Seal and marinate in the refrigerator for at least 30 minutes or up to 8 hours.
- Preheat grill or skillet over medium-high heat.
- Remove chicken from marinade and cook for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).
- Let rest for a few minutes before slicing and serving.
