Description

Simple lemon herb chicken is a fresh, flavorful, and healthy dish made with juicy chicken marinated in lemon, garlic, and herbs, then grilled or pan-seared to perfection. Perfect for weeknight dinners, meal prep, or entertaining.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh herbs (such as rosemary, thyme, oregano, or parsley) or 2 tsp dried herbs
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. In a bowl, whisk together lemon juice, lemon zest, olive oil, garlic, herbs, salt, and pepper.
  2. Place the chicken in a resealable bag or shallow dish and pour the marinade over it.
  3. Seal and marinate in the refrigerator for at least 30 minutes or up to 8 hours.
  4. Preheat grill or skillet over medium-high heat.
  5. Remove chicken from marinade and cook for 5–7 minutes per side, or until internal temperature reaches 165°F (74°C).
  6. Let rest for a few minutes before slicing and serving.
