Ingredients
- 24 chocolate wafer cookies or Oreos, crushed
- 5 tbsp unsalted butter, melted
- 8 oz semi-sweet or bittersweet chocolate, chopped
- 3 large eggs, separated
- 1/4 cup granulated sugar (divided)
- 1 1/2 cups heavy cream
- 1 tsp vanilla extract
- 1/8 tsp salt
- Whipped cream (for topping, optional)
- Chocolate shavings or curls (optional garnish)
Instructions
- Preheat oven to 350°F (175°C).
- Combine crushed cookies and melted butter in a bowl. Press mixture into a pie pan to form the crust.
- Bake the crust for 8–10 minutes. Let cool completely.
- Melt the chocolate in a double boiler or microwave, stirring until smooth. Let cool slightly.
- In a bowl, beat egg yolks with half the sugar until pale and thick. Stir in melted chocolate and vanilla extract.
- In a separate bowl, whip heavy cream to soft peaks. Set aside.
- In a clean bowl, beat egg whites and salt until foamy. Gradually add remaining sugar and beat until stiff peaks form.
- Gently fold whipped cream into the chocolate mixture. Then carefully fold in the beaten egg whites until fully combined.
- Spoon the mousse into the cooled crust, mounding it high. Smooth the top.
- Chill for at least 4 hours, or until fully set.
- Top with whipped cream and chocolate shavings before serving, if desired.
