Description

Slow Cooker Creamy Lemon Butter Chicken combines tender chicken with a rich, creamy, and zesty lemon-butter sauce. It’s a comforting and flavorful meal that cooks low and slow, perfect for weeknight dinners or special occasions.


Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Italian seasoning
  • 1 tbsp cornstarch (optional, for thickening)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken with salt and pepper on both sides.
  2. In a skillet, melt butter over medium-high heat and sear chicken until golden brown, about 2-3 minutes per side.
  3. Transfer chicken to the slow cooker.
  4. In the same skillet, sauté garlic for 30 seconds, then add chicken broth, lemon juice, lemon zest, and Italian seasoning. Simmer lightly.
  5. Pour the lemon mixture over the chicken in the slow cooker.
  6. Cover and cook on low for 4-5 hours or high for 2-3 hours until chicken is tender.
  7. In the last 30 minutes, stir in heavy cream. For thicker sauce, add a cornstarch slurry at this stage.
  8. Once cooked, garnish with fresh parsley and serve warm with your favorite side dish.
