Description

Slow Cooker Garlic Parmesan Chicken and Potatoes is a rich, creamy, and savory one-pot meal made with tender chicken, baby potatoes, and a flavorful garlic parmesan sauce. It’s the perfect set-it-and-forget-it comfort food for busy nights.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby potatoes, halved
  • 2 tablespoons olive oil or melted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 3/4 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Lightly grease the inside of your slow cooker with cooking spray or olive oil.
  2. Place the halved baby potatoes in the bottom of the slow cooker.
  3. Arrange the chicken breasts or thighs on top of the potatoes.
  4. In a small bowl, whisk together the olive oil (or melted butter), minced garlic, chicken broth, heavy cream, parmesan cheese, Italian seasoning, dried parsley, salt, and black pepper.
  5. Pour the garlic parmesan mixture evenly over the chicken and potatoes.
  6. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is cooked through and the potatoes are fork-tender.
  7. Stir gently to coat everything in the sauce.
  8. Garnish with additional parmesan cheese and fresh parsley before serving.
