Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 4 cloves garlic, minced
  • 1/4 cup ketchup
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for slurry)
  • Salt and pepper, to taste
  • Sliced green onions (optional, for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Place chicken in the bottom of the slow cooker.
  2. In a bowl, whisk together honey, soy sauce, garlic, ketchup, vinegar, salt, and pepper.
  3. Pour the sauce mixture over the chicken, ensuring it’s well coated.
  4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is fully cooked and tender.
  5. Remove the chicken and shred it with two forks.
  6. In a small bowl, stir together cornstarch and water to create a slurry.
  7. Add the slurry to the sauce in the slow cooker and stir well.
