Ingredients
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning (or 2 tbsp homemade)
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (frozen or canned, drained)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (8 oz) tomato sauce
- 1 ½ cups shredded cheddar or Mexican blend cheese
- Fritos corn chips (for serving)
- Optional toppings: sour cream, guacamole, salsa, jalapeños, shredded lettuce, diced tomatoes, green onions, fresh cilantro
Instructions
- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
- Transfer the cooked meat to a slow cooker.
- Stir in taco seasoning, diced tomatoes with green chilies, tomato sauce, black beans, corn, onion, and garlic. Mix until well combined.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours.
- About 30 minutes before serving, stir in shredded cheese until melted and combined.
- To serve, layer Fritos in individual bowls and top with the hot taco mixture.
- Add desired toppings and serve immediately.
