Description

Slow Cooker Smothered Fritos Taco Bowl is a flavorful, hands-off meal made with seasoned taco meat, beans, corn, and cheese slow-cooked to perfection and served over crunchy Fritos with your favorite toppings. It’s a fun and satisfying dish for weeknights, parties, or game day.


Ingredients

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned, drained)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (8 oz) tomato sauce
  • 1 ½ cups shredded cheddar or Mexican blend cheese
  • Fritos corn chips (for serving)
  • Optional toppings: sour cream, guacamole, salsa, jalapeños, shredded lettuce, diced tomatoes, green onions, fresh cilantro

Instructions

  1. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat.
  2. Transfer the cooked meat to a slow cooker.
  3. Stir in taco seasoning, diced tomatoes with green chilies, tomato sauce, black beans, corn, onion, and garlic. Mix until well combined.
  4. Cover and cook on low for 6–7 hours or on high for 3–4 hours.
  5. About 30 minutes before serving, stir in shredded cheese until melted and combined.
  6. To serve, layer Fritos in individual bowls and top with the hot taco mixture.
  7. Add desired toppings and serve immediately.

Notes
