Ingredients
- 4 small cod fillets (about 4 oz each)
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1/2 cup heavy cream (or coconut cream for a dairy-free version)
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs (preferably panko for extra crunch)
- 1 tbsp butter (melted)
- 1 tbsp fresh parsley, chopped (for garnish)
- 1 tsp lemon zest (optional, for added freshness)
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C). Grease or line a baking dish with parchment paper. If using individual gratins, use small ramekins.
- Prepare the cod fillets: Place the cod fillets on a baking sheet or in a baking dish. Drizzle with olive oil and season with salt and pepper. Bake for 10-12 minutes until cooked through and flakes easily.
- Make the creamy sauce: In a small saucepan, heat heavy cream over medium heat until warmed through. Stir in Parmesan cheese and cook for 2-3 minutes until smooth. Remove from heat.
- Prepare the breadcrumb topping: In a small bowl, combine breadcrumbs, melted butter, and parsley. Stir until well-coated.
- Assemble the gratins: Break cooked cod into smaller pieces and divide it between ramekins or the baking dish. Pour the creamy sauce over the cod and sprinkle the breadcrumb mixture on top.
- Bake: Place in the oven and bake for 10-15 minutes, until golden brown and crispy. For an extra-crisp top, broil for the last 2-3 minutes.
- Garnish and serve: Remove from the oven and garnish with parsley and lemon zest. Serve immediately with sides like mashed potatoes or a salad.
