Description

S’mores Popsicles are a refreshing twist on the classic campfire treat, offering all the delicious flavors of s’mores in a frozen form. These popsicles combine creamy chocolate, marshmallows, and a graham cracker crust, making them the perfect summer treat.


Ingredients

  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/4 cup semi-sweet chocolate chips
  • 2 tablespoons sugar
  • 1 cup mini marshmallows
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup graham cracker crumbs
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon sugar

Instructions

  1. Prepare the graham cracker crust: In a small bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until well mixed. Set aside.
  2. Make the chocolate layer: In a saucepan, heat the heavy cream and milk over medium heat until it begins to simmer. Remove from heat and stir in the chocolate chips and sugar. Stir until the chocolate is completely melted and smooth. Let the mixture cool slightly.
  3. Make the marshmallow layer: In a separate saucepan, heat the heavy cream over medium heat until it’s warm. Add the mini marshmallows and stir constantly until the marshmallows have melted and the mixture becomes smooth. Remove from heat and stir in the vanilla extract. Allow the marshmallow mixture to cool.
  4. Assemble the popsicles: Lightly grease your popsicle molds. Start by adding a spoonful of the graham cracker crust mixture to the bottom of each popsicle mold. Press it gently to create an even layer. Then, pour in a layer of the chocolate mixture, filling each mold about halfway. Add a few mini marshmallows on top of the chocolate layer. Next, pour the marshmallow mixture over the chocolate layer, leaving some space at the top for the final graham cracker crust layer.
  5. Top with graham cracker crust: Sprinkle the remaining graham cracker crust mixture over the top of each popsicle mold, pressing gently to make it stick.
  6. Freeze the popsicles: Insert the sticks into the molds and freeze for at least 4-6 hours, or until the popsicles are completely frozen and firm.
  7. Unmold and serve: Once frozen, run warm water over the outside of the popsicle molds for a few seconds to help release the popsicles. Gently pull the sticks to remove the popsicles from the molds. Serve immediately and enjoy!

Notes

For extra indulgence, dip the popsicles in melted chocolate or drizzle chocolate on top.Feel free to customize the filling with nuts, chocolate chunks, or even fruit for added variety.
