Ingredients
- 4 large egg whites
- 1 cup granulated sugar
- 1 tsp baking powder
- 1 tsp vanilla extract
- 20 crushed soda crackers (about 1 cup)
- ½ cup chopped pecans or walnuts (optional)
- 1 ½ cups whipped cream (for topping)
- 1 ½ cups fresh berries or sliced fruit (strawberries, raspberries, or peaches)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch pie plate or baking dish.
- In a large mixing bowl, beat egg whites until soft peaks form.
- Gradually add sugar and baking powder while beating until stiff, glossy peaks form.
- Gently fold in vanilla, crushed soda crackers, and nuts (if using) with a spatula.
- Pour the mixture into the prepared pie plate and smooth the top.
- Bake for 25–30 minutes until the top is golden and slightly crisp.
- Let the pie cool completely at room temperature for about 1 hour.
- Top with whipped cream and fresh fruit just before serving.
