Description

Soda Cracker Pie is a nostalgic, airy dessert made from crushed soda crackers, egg whites, and sugar. It bakes into a crisp, golden meringue-like shell with a soft, chewy center, topped with whipped cream and fresh fruit for a light and elegant treat.


Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 20 crushed soda crackers (about 1 cup)
  • ½ cup chopped pecans or walnuts (optional)
  • 1 ½ cups whipped cream (for topping)
  • 1 ½ cups fresh berries or sliced fruit (strawberries, raspberries, or peaches)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch pie plate or baking dish.
  2. In a large mixing bowl, beat egg whites until soft peaks form.
  3. Gradually add sugar and baking powder while beating until stiff, glossy peaks form.
  4. Gently fold in vanilla, crushed soda crackers, and nuts (if using) with a spatula.
  5. Pour the mixture into the prepared pie plate and smooth the top.
  6. Bake for 25–30 minutes until the top is golden and slightly crisp.
  7. Let the pie cool completely at room temperature for about 1 hour.
  8. Top with whipped cream and fresh fruit just before serving.

For best texture, add whipped cream and fruit right before serving.Use gluten-free soda crackers to make this pie gluten-free.Add citrus zest or shredded coconut for extra flavor in the meringue.Cracks on top are normal and part of the pie’s rustic appeal.Homemade whipped cream is recommended, but store-bought works in a pinch.
