These Sopapillas are light, airy fried pastries that puff up beautifully and are served warm with honey, powdered sugar, or cinnamon sugar. Instructions

Mix dry ingredients:
In a large bowl, whisk together the flour, baking powder, and salt. -
Add fat:
Add the shortening or butter and cut it into the flour mixture until it resembles coarse crumbs. -
Form the dough:
Gradually add the warm water while mixing until a soft dough forms. -
Knead the dough:
Turn the dough onto a lightly floured surface and knead for about 2–3 minutes until smooth. -
Rest the dough:
Cover the dough and let it rest for 20 minutes. -
Roll and cut:
Roll the dough out to about 1/8-inch thickness. Cut into squares or triangles about 3–4 inches wide. -
Heat the oil:
Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C). -
Fry the sopapillas:
Carefully place the dough pieces into the hot oil and fry for 1–2 minutes per side until golden brown and puffed. -
Drain:
Remove with a slotted spoon and place on paper towels to drain excess oil. - Serve:
Serve warm with honey drizzled on top or sprinkled with powdered sugar or cinnamon sugar.
Notes
Letting the dough rest helps the sopapillas puff better during frying.Make sure the oil is hot enough (around 350°F) to achieve the signature puff.Do not overcrowd the pan while frying.Sopapillas are best served immediately while warm and crispy.You can also fill the hollow centers with honey, chocolate sauce, or whipped cream.
