Ingredients

For the Pancakes:

  • 1 ½ cups all-purpose flour

  • 1 ¼ cups milk

For the Cider Syrup:

  • 1 cup apple cider

  • ¼ cup brown sugar

  • 2 tablespoons unsalted butter

  • ¼ teaspoon ground cinnamon

  • Pinch of salt

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg.

  2. In a separate bowl, whisk milk, eggs, melted butter, and vanilla extract.

  3. Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix.

  4. Fold in diced apples.

  5. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter.

  6. Pour about ¼ cup of batter per pancake onto the skillet.

  7. Cook 2–3 minutes until bubbles form and edges look set. Flip and cook another 2–3 minutes until golden brown.

  8. Repeat with remaining batter.

For the Cider Syrup:

  3. Stir in butter, cinnamon, and salt. Continue cooking until thickened to a pourable syrup consistency.
