Ingredients
- 1 lb thinly sliced beef (sirloin, flank, or ribeye)
- 3 tbsp soy sauce
- 3 tbsp gochujang (Korean red chili paste)
- 1 tbsp brown sugar or honey
- 3 cloves garlic, minced
- 1 tsp fresh ginger, minced
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 12 oz cooked noodles (udon, ramen, soba, or rice noodles)
- 2 green onions, sliced
- 1 tsp sesame seeds (for garnish)
Instructions
- In a small bowl, whisk together gochujang, soy sauce, brown sugar, garlic, ginger, rice vinegar, and sesame oil to make the sauce.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add beef slices and cook for 2–3 minutes until just browned.
- Pour in the sauce and stir until beef is coated and sauce begins to thicken.
- Add cooked noodles and toss until evenly coated and heated through.
- Taste and adjust seasoning—add more gochujang for spice or soy sauce for saltiness.
- Serve hot, garnished with green onions and sesame seeds.
Notes
Add stir-fried vegetables like bell peppers, carrots, mushrooms, or bok choy for extra nutrition.For more heat, add Korean red pepper flakes (gochugaru).To make it milder, reduce the gochujang and increase soy sauce.Use tamari and rice noodles for a gluten-free version.Top with a fried or soft-boiled egg for added richness.
