Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg (for egg wash)
- 1/2 cup breadcrumbs (optional, for extra crunch)
- Fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Place the chicken breasts between two pieces of plastic wrap or parchment paper and gently pound them to an even thickness of about 1/2 inch.
- In a bowl, combine the chopped spinach, crumbled feta cheese, Parmesan cheese, minced garlic, oregano, salt, and pepper. Mix until well combined.
- Lay the chicken breasts flat and spoon a generous amount of the spinach and feta mixture onto each one. Roll up the chicken tightly around the filling and secure the ends with toothpicks.
- Lightly beat the egg in a small bowl. Dip each chicken roll into the egg wash, then coat with breadcrumbs if desired.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken rolls and cook for about 2-3 minutes per side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the outside is crispy and golden.
- Remove the toothpicks from the chicken rolls, slice if desired, garnish with fresh parsley, and serve immediately.
