Description

Spinach and Feta Chicken Rolls are a flavorful, easy-to-make dish that combines tender chicken breasts with a savory spinach and feta filling. This dish is perfect for weeknight dinners or special occasions, offering a satisfying contrast of crispy chicken and creamy filling.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg (for egg wash)
  • 1/2 cup breadcrumbs (optional, for extra crunch)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Place the chicken breasts between two pieces of plastic wrap or parchment paper and gently pound them to an even thickness of about 1/2 inch.
  2. In a bowl, combine the chopped spinach, crumbled feta cheese, Parmesan cheese, minced garlic, oregano, salt, and pepper. Mix until well combined.
  3. Lay the chicken breasts flat and spoon a generous amount of the spinach and feta mixture onto each one. Roll up the chicken tightly around the filling and secure the ends with toothpicks.
  4. Lightly beat the egg in a small bowl. Dip each chicken roll into the egg wash, then coat with breadcrumbs if desired.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken rolls and cook for about 2-3 minutes per side until golden brown.
  6. Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the outside is crispy and golden.
  7. Remove the toothpicks from the chicken rolls, slice if desired, garnish with fresh parsley, and serve immediately.
