Description

Spinach Dip Chicken Bake is a creamy, flavorful, and comforting dish that combines tender chicken with a rich and creamy spinach dip. This easy-to-make casserole is perfect for dinner or any occasion when you’re craving something warm, hearty, and packed with flavor.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 (10 oz) package frozen spinach, thawed and drained
  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped green onions (optional)
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Prepare the chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and garlic powder. Sear the chicken breasts for 4-5 minutes on each side until golden brown (they do not need to be fully cooked through at this stage). Remove the chicken from the skillet and set aside.
  3. Make the spinach dip mixture: In a mixing bowl, combine the thawed and drained spinach, cream cheese, sour cream, mozzarella cheese, Parmesan cheese, and green onions (if using). Stir until smooth and well combined. If you like a bit of spice, add red pepper flakes to the mixture.
  4. Assemble the bake: Spread the spinach dip mixture evenly in the bottom of the prepared baking dish. Place the seared chicken breasts on top of the dip mixture.
  5. Bake the chicken: Cover the baking dish with foil and bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 75°C). For extra golden-brown cheese on top, remove the foil during the last 5 minutes of baking.
  6. Serve: Once baked, remove from the oven and let it rest for a few minutes before serving. Garnish with additional chopped green onions or Parmesan cheese if desired.

Notes

If you prefer darker meat, you can swap chicken breasts for bone-in or boneless chicken thighs.For extra richness, top the chicken with more shredded mozzarella or provolone during the last 5 minutes of baking.This dish pairs beautifully with steamed veggies or a side salad for a low-carb option.
