Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 (10 oz) package frozen spinach, thawed and drained
- 1 (8 oz) package cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped green onions (optional)
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
Instructions
- Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Prepare the chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, and garlic powder. Sear the chicken breasts for 4-5 minutes on each side until golden brown (they do not need to be fully cooked through at this stage). Remove the chicken from the skillet and set aside.
- Make the spinach dip mixture: In a mixing bowl, combine the thawed and drained spinach, cream cheese, sour cream, mozzarella cheese, Parmesan cheese, and green onions (if using). Stir until smooth and well combined. If you like a bit of spice, add red pepper flakes to the mixture.
- Assemble the bake: Spread the spinach dip mixture evenly in the bottom of the prepared baking dish. Place the seared chicken breasts on top of the dip mixture.
- Bake the chicken: Cover the baking dish with foil and bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 75°C). For extra golden-brown cheese on top, remove the foil during the last 5 minutes of baking.
- Serve: Once baked, remove from the oven and let it rest for a few minutes before serving. Garnish with additional chopped green onions or Parmesan cheese if desired.
Notes
If you prefer darker meat, you can swap chicken breasts for bone-in or boneless chicken thighs.For extra richness, top the chicken with more shredded mozzarella or provolone during the last 5 minutes of baking.This dish pairs beautifully with steamed veggies or a side salad for a low-carb option.
