Ingredients

  • 1/2 teaspoon baking powder

For the cheesecake layer:

  • 1/2 cup cream cheese, softened

  • 1/4 cup Greek yogurt or sour cream

  • 2 tablespoons honey or maple syrup

  • 1 teaspoon vanilla extract

For the topping:

  • 1 1/2 cups fresh strawberries, sliced (or use frozen, thawed strawberries)

Instructions

  • Preheat the oven:
    Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or cooking spray.

  • Prepare the oatmeal base:
    In a large mixing bowl, whisk together oats, milk, Greek yogurt, eggs, maple syrup, vanilla extract, cinnamon, salt, and baking powder until well combined. Pour the mixture into the prepared baking dish and spread it evenly.

  • Prepare the cheesecake layer:
    In a separate bowl, combine softened cream cheese, Greek yogurt, honey (or maple syrup), and vanilla extract. Use a hand mixer or whisk to beat until smooth and creamy.

  • Layer the cheesecake mixture:
    Spoon the cheesecake mixture onto the oatmeal base in dollops. Gently swirl the cheesecake into the oatmeal using a spoon or spatula, creating pockets of creamy cheesecake throughout the oatmeal.

  • Add the strawberries:
    Top the oatmeal with fresh strawberries, spreading them evenly across the surface. If you like sweeter strawberries, drizzle some honey or maple syrup on top before baking.

  • Bake the oatmeal:
