Description

These Strawberry Oatmeal Bars combine a chewy oat crust with a sweet strawberry filling and a crumbly topping. Perfect for breakfast, snacks, or dessert, they’re easy to make and irresistibly delicious.


Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 2/3 cup brown sugar, packed
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 3/4 to 1 cup strawberry preserves or 1 1/2 cups fresh chopped strawberries
  • 1 tbsp cornstarch (only if using fresh strawberries)
  • 1 tsp lemon juice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, combine oats, flour, brown sugar, baking powder, and salt.
  3. Add melted butter and vanilla extract. Mix until crumbly and the mixture holds together when pressed.
  4. Press two-thirds of the mixture into the bottom of the prepared pan to form the crust.
  5. If using fresh strawberries, mix them with cornstarch and lemon juice. Spread strawberry preserves or prepared fresh strawberry mixture evenly over the crust.
  6. Sprinkle the remaining oat mixture over the top as a crumb topping.
  7. Bake for 30–35 minutes or until the top is golden and the filling is bubbly.
  8. Let cool completely in the pan before slicing into bars.

Notes

Let the bars cool completely before cutting to help them hold their shape.Quick oats can be used, but the texture may be softer.For a vegan version, use vegan butter or coconut oil.To make gluten-free bars, substitute the flour with a 1:1 gluten-free flour blend.Add chopped nuts or spices like cinnamon for extra flavor and texture.
