Ingredients

For the Crust:

For the Strawberry Filling:

  • 1 pound fresh strawberries (hulled and halved or quartered)

  • 3/4 cup granulated sugar

  • 1 tablespoon lemon juice

  • 2 tablespoons cornstarch

  • 1/2 cup water

  • 1/4 teaspoon vanilla extract

For the Topping:

  • 1 cup heavy whipping cream

  • 2 tablespoons powdered sugar

  • 1 teaspoon vanilla extract

Instructions

  • Prepare the Crust: Preheat the oven to 375°F (190°C). Follow package instructions to pre-bake the store-bought pie crust or bake the homemade crust until golden. Once baked and cooled, optionally sprinkle sugar over the crust for added sweetness.

  • Make the Filling: In a saucepan, combine 1/4 cup granulated sugar, cornstarch, and water. Bring to a simmer over medium heat, stirring constantly until thickened (3-5 minutes). Remove from heat, stir in lemon juice and vanilla extract, and let cool completely.

  • Prepare the Strawberries: Hull and slice the strawberries, then place them in a large bowl.

  • Combine the Strawberries and Filling: Pour the cooled syrup over the strawberries and toss gently to coat.

  • Assemble the Pie: Pour the strawberry mixture into the prepared crust, spreading evenly. Refrigerate the pie for at least 4 hours or until fully set.

  • Make the Topping: Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. Be careful not to overwhip.

  • Serve the Pie: Once set, top the pie with whipped cream and serve chilled.
