Strawberry Shortcake Tiramisu is a fusion of tiramisu and strawberry shortcake, combining layers of fluffy shortcake, mascarpone cream, and fresh strawberries. This dessert is a perfect indulgence for any occasion, offering a balance of richness and freshness.
Ingredients
- 1 pound fresh strawberries, hulled and sliced
- 1/4 cup granulated sugar (for strawberries)
- 1 cup heavy cream
- 1/2 cup mascarpone cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup shortcake or sponge cake, cut into cubes (store-bought or homemade)
- 1/2 cup strawberry jam or puree
- 2 tablespoons orange liqueur (optional, or use water for non-alcoholic version)
- Crushed graham crackers or ladyfingers for garnish (optional)
Instructions
- In a medium bowl, toss the sliced strawberries with granulated sugar. Let them sit for about 15-20 minutes to release their juices.
- In a separate mixing bowl, whip the heavy cream until stiff peaks form.
- In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Gently fold the whipped cream into the mascarpone mixture until fully combined and smooth.
- In a small bowl, combine the strawberry jam (or puree) with the orange liqueur or water.
- To assemble the tiramisu, dip the shortcake or sponge cake cubes into the strawberry jam mixture, soaking them just enough to absorb the liquid without becoming soggy. Arrange a layer of soaked shortcake cubes at the bottom of a trifle dish or individual dessert cups.
- Add a layer of the mascarpone cream mixture on top of the shortcake cubes, spreading it evenly.
- Spoon some of the macerated strawberries (with their juices) over the mascarpone layer.
- Repeat the layering process, alternating between shortcake cubes, mascarpone cream, and strawberries.
- Finish with a layer of strawberries on top and garnish with crushed graham crackers or ladyfingers if desired.
- Refrigerate the tiramisu for at least 4 hours, or preferably overnight, to allow the flavors to meld together.
