Ingredients

  • 1 lb chicken breast (boneless, skinless)

  • 1 tablespoon olive oil

  • 1/2 cup sweet chili sauce

  • 2 cloves garlic, minced

  • 1 tablespoon soy sauce

  • 1 teaspoon rice vinegar

  • 1/2 teaspoon red pepper flakes (optional for extra heat)

  • 1 pizza dough (store-bought or homemade)

  • 1 cup shredded mozzarella cheese

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup cilantro, chopped (optional, for garnish)

  • 1/2 tablespoon sesame seeds (optional, for garnish)

  • Salt and pepper to taste

Instructions

  • Preheat the oven: Set your oven to 475°F (245°C). If using a pizza stone, preheat it in the oven as well.

  • Cook the chicken: Heat olive oil over medium heat in a skillet. Season chicken breasts with salt and pepper and cook for 6-7 minutes on each side, until fully cooked (165°F/74°C). Let the chicken rest, then dice it into small pieces.

  • Prepare the chili garlic sauce: Mix sweet chili sauce, minced garlic, soy sauce, rice vinegar, and red pepper flakes (if using) in a small bowl. Set aside.

  • Assemble the pizza: Roll out pizza dough on a lightly floured surface to your desired thickness. Place the dough on a greased baking sheet or pizza stone. Spread the chili garlic sauce evenly over the dough, leaving a small border for the crust.

  • Add the toppings: Sprinkle half of the mozzarella cheese over the sauce. Add diced chicken, red onion slices, and the remaining mozzarella cheese. Top with shredded cheddar cheese.

  • Bake the pizza: Bake for 10-12 minutes, or until the crust is golden and crispy, and the cheese is melted and bubbly.

  • Garnish and serve: Let the pizza cool for a few minutes before garnishing with cilantro and sesame seeds. Slice and serve
