Ingredients
- 1 cup mashed cooked sweet potato
- 3/4 cup all-purpose or whole wheat flour
- 1 1/2 tsp baking powder
- 1/2 cup milk (dairy or non-dairy)
- 1 large egg
- 2 tbsp melted butter or oil
- 1/2 tsp cinnamon (optional)
- 1/2 tsp vanilla extract (optional, for sweet version)
- 1/4 tsp salt

Instructions
- Preheat your waffle iron and lightly grease it if needed.
- In a large bowl, mix the mashed sweet potato, egg, milk, melted butter or oil, and vanilla extract (if using).
- In a separate bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Add the dry ingredients to the wet mixture and stir until just combined. The batter should be thick but pourable—add a splash more milk if needed.
- Pour the batter into the preheated waffle iron, spreading evenly to cover the base.
- Cook for 4–6 minutes, or until golden brown and crisp.
- Carefully remove and repeat with remaining batter.
- Serve warm with your favorite sweet or savory toppings.
