Ingredients
- 1 lb ground beef (or ground turkey/chicken for a lighter version)
- 1 packet taco seasoning (or homemade seasoning)
- 8 oz spaghetti (or any pasta of your choice)
- 1 can (14.5 oz) diced tomatoes
- 1 can (4 oz) diced green chilies (optional for added heat)
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream (optional)
- 1/4 cup chopped green onions or cilantro (for garnish)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Cook the spaghetti: Boil the spaghetti in salted water according to package instructions. Drain and set aside.
- Prepare the beef mixture: Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spatula. Drain any excess fat.
- Add taco seasoning: Stir in taco seasoning, diced tomatoes (with juice), and green chilies (if using). Season with salt and pepper, and simmer for 5 minutes to combine the flavors.
- Combine with spaghetti: In a large bowl, combine cooked spaghetti and beef mixture. Stir in half of the shredded cheddar and mozzarella cheese, then toss to combine.
- Bake: Preheat oven to 375°F (190°C). Transfer the mixture to a greased 9×13-inch baking dish. Top with remaining cheese and bake for 15-20 minutes, or until cheese is melted and bubbly.
- Garnish and serve: Remove from the oven and let it cool for a few minutes. Garnish with sour cream, green onions, or cilantro if desired, then serve and enjoy!
