Ingredients

  • 4 large poblano peppers
    1 cup cooked rice
    1/2 pound ground beef or chicken
    1/2 cup black beans, drained and rinsed
    1/2 cup corn kernels
    1 small onion, finely chopped
    2 cloves garlic, minced
    1 cup tomato sauce
    1 teaspoon cumin
    1/2 teaspoon paprika
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    1 tablespoon olive oil
    1 cup shredded cheese (cheddar or Monterey Jack)

Instructions

  • Preheat your oven to 190°C (375°F) and lightly grease a baking dish.
  • Roast the poblano peppers over an open flame or under a broiler until the skins are charred. Transfer them to a bowl, cover, and let steam for 10 minutes, then peel off the skins.
  • Make a slit in each pepper and carefully remove the seeds.
  • Heat olive oil in a skillet over medium heat. Sauté the onion and garlic until soft and fragrant.
  • Add ground beef or chicken and cook until browned.
