Description

Make these Starbucks Oat Bars at home with simple pantry ingredients. These chewy, buttery oat bars have a soft bakery-style texture and cozy flavor, perfect for breakfast, snacks, or coffee breaks.


Ingredients

  • 2 1/2 cups quick oats, divided

  • 1/2 cup unsalted butter

  • 1/2 cup light brown sugar, packed

  • 1/4 cup maple syrup or corn syrup

  • 2 tablespoons milk

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • 1/2 teaspoon ground cinnamon, optional

Instructions

  • Preheat the oven to 325°F and line an 8×8-inch baking pan with parchment paper.

  • Place 1 1/4 cups of the quick oats in a food processor and pulse until finely ground, similar to oat flour.

  • In a large mixing bowl, combine the oat flour with the remaining 1 1/4 cups quick oats, salt, and cinnamon if using.

  • In a small saucepan over medium heat, melt the butter with the brown sugar and maple syrup until smooth and the sugar is mostly dissolved.

  • Remove from the heat and stir in the milk and vanilla extract.

  • Pour the wet mixture over the oat mixture and stir until fully combined.

  • Press the mixture firmly and evenly into the prepared pan.

  • Bake for 18 to 20 minutes, until the edges are lightly golden and the center looks set.

  • Cool completely in the pan before lifting out and slicing into 16 bars.

Notes

Pulsing part of the oats gives the bars a more bakery-style texture.Press the mixture firmly into the pan so the bars hold together well after baking.Let the bars cool completely before slicing, since they firm up as they cool.For a dairy-free version, use plant-based butter and non-dairy milk.Optional add-ins include mini chocolate chips, chopped nuts, raisins, or dried cranberries.A drizzle of melted chocolate on top gives them a coffee-shop style finish.
