Description

These Zucchini Tots are crispy, cheesy bites made with shredded zucchini, breadcrumbs, and simple seasonings. Baked until golden and tender inside, this easy zucchini tots recipe is perfect as a healthy snack, appetizer, or side dish.


Ingredients

  • 2 medium zucchini, grated
  • 1 large egg

  • 1/2 cup breadcrumbs

  • 1/2 cup cheddar cheese, shredded

  • 1/4 cup parmesan cheese, grated

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • Olive oil spray or 1 tablespoon olive oil for greasing


Instructions

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

  • Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible.

  • Transfer the drained zucchini to a mixing bowl.

  • Add the egg, breadcrumbs, cheddar cheese, parmesan cheese, garlic powder, onion powder, salt, and black pepper.

  • Mix until all ingredients are well combined.

  • Scoop small portions of the mixture and shape them into small cylindrical “tot” shapes with your hands.

  • Place the shaped tots onto the prepared baking sheet.

  • Lightly spray or brush them with olive oil.

  • Bake for 18–22 minutes, turning halfway through, until golden brown and crispy.

  • Allow the zucchini tots to cool slightly before serving.


Notes

Squeezing excess moisture from the zucchini is essential to keep the tots crispy and prevent sogginess.If the mixture feels too wet, add a little extra breadcrumbs for better structure.These tots work well in an air fryer at 375°F for 10–12 minutes, turning halfway through.Add chopped herbs like parsley, basil, or chives for extra flavor.Serve with dipping sauces such as ranch, marinara, garlic yogurt sauce, or spicy mayo.
