This triple berry cobbler is a warm, comforting dessert made with strawberries, blueberries, and raspberries topped with a golden, buttery crust. An easy homemade cobbler recipe perfect for any season and best served with ice cream.
Ingredients
For the Filling:
- 2 cups strawberries (fresh or frozen, sliced)
- 1 cup blueberries
- 1 cup raspberries
- ½ cup granulated sugar
- ¼ cup brown sugar
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
For the Topping:
- 1 cup all-purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, cold and cubed
- ½ cup milk
- 1–2 tablespoons sugar (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a large bowl, combine strawberries, blueberries, raspberries, granulated sugar, brown sugar, lemon juice, cornstarch, and vanilla extract. Mix well.
- Pour berry mixture into the prepared baking dish and spread evenly.
- In another bowl, whisk together flour, baking powder, and salt.
- Cut in cold butter until the mixture resembles coarse crumbs.
- Stir in milk until a soft dough forms.
- Drop spoonfuls of dough over the berry filling, leaving gaps.
- Sprinkle sugar on top if desired.
- Bake for 35–45 minutes, until topping is golden and filling is bubbling.
- Let cool slightly before serving.
