Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
1/2 cup grated carrot
1/2 cup zucchini, grated and squeezed dry
1/4 cup finely chopped onion
2 tablespoons fresh parsley, chopped
2 cloves garlic, minced
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup flour (or chickpea flour for gluten-free)
1 egg (or flax egg for vegan option)
2–3 tablespoons oil for frying
Instructions
- In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth with some texture remaining.
- Add grated carrot, zucchini, onion, parsley, and garlic. Mix well.
- Stir in cumin, paprika, salt, and black pepper.
- Add flour and egg, then mix until a thick batter forms.
- Heat oil in a skillet over medium heat.
- Scoop about 2 tablespoons of mixture per fritter and flatten slightly in the pan.
- Cook for 3 to 4 minutes on each side until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce.
