Description

Watermelon Salad is a refreshing, light, and vibrant dish perfect for summer gatherings or as a healthy snack. The sweetness of watermelon combines beautifully with the savory feta, crunchy cucumber, and fresh herbs. Drizzled with olive oil and balsamic vinegar, this salad is both hydrating and full of flavor—ideal for barbecues, picnics, or a quick side dish.

Ingredients

  • 4 cups cubed fresh watermelon (about 1/2 medium-sized watermelon)

  • 1 cucumber, peeled, seeded, and sliced

  • 1/2 cup crumbled feta cheese (optional)

  • 1/4 cup fresh mint leaves, chopped (or basil, if preferred)

  • 1 tablespoon olive oil

  • 1 tablespoon balsamic vinegar (or lime juice for a citrus twist)

  • Salt and pepper, to taste

  • 1 tablespoon honey or agave syrup (optional, for extra sweetness)

  • Lime wedges, for garnish (optional)

Instructions

  • Prepare the Ingredients:

    • Cut the watermelon into small cubes and place them in a large mixing bowl.

    • Peel, seed, and slice the cucumber into thin rounds or half-moons, then add to the bowl with the watermelon.

    • Chop the fresh mint or basil leaves and set aside.

  • Assemble the Salad:

    • If using feta cheese, sprinkle the crumbled feta over the watermelon and cucumber.

    • Add the chopped mint or basil to the bowl and gently toss the ingredients together to combine.

  • Make the Dressing:

    • In a small bowl, whisk together the olive oil, balsamic vinegar (or lime juice), honey or agave syrup (if using), and a pinch of salt and pepper.

    • Drizzle the dressing over the salad and toss gently to coat everything evenly.

  • Serve:

    • Garnish with extra fresh mint or basil and lime wedges for a burst of freshness.

    • Serve immediately, or chill the salad in the fridge for 15-20 minutes for a colder, more refreshing dish.

Notes

Add Avocado: For a creamy element, add cubed avocado to the salad. It complements the sweetness of watermelon wonderfully.Spicy Version: For a little heat, add thinly sliced jalapeños or red pepper flakes.Herb Variations: Experiment with different herbs like cilantro, basil, or parsley to switch up the flavor profile.Cheese Alternatives: If you’re not a fan of feta, try goat cheese, ricotta, or Parmesan for a different flavor.Vegan Version: Skip the cheese or use a vegan feta to make this dish dairy-free.
