Description

Zaatar Manakeesh is a traditional Middle Eastern flatbread topped with a flavorful blend of zaatar and olive oil. Baked until golden and crispy on the edges, it makes for a perfect breakfast, snack, or part of a mezze spread.

Ingredients

  • 3 cups all-purpose flour
  • 1 cup warm water
  • 2 1/4 tsp active dry yeast (1 packet)
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil (for dough)
  • 1/2 cup zaatar spice blend
  • 1/4 cup olive oil (for topping)

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. In a large bowl, mix flour and salt. Add the yeast mixture and 2 tbsp olive oil, then knead until a soft, elastic dough forms.
  3. Cover the dough with a damp cloth and let it rise for 1 hour, or until doubled in size.
  4. Preheat the oven to 475°F (245°C).
  5. Divide the dough into 6 equal portions and roll each into a round flatbread about 1/4 inch thick.
  6. Mix the zaatar spice with 1/4 cup olive oil to create a spreadable paste.
  7. Spread the zaatar mixture evenly over each flatbread.
  8. Place the flatbreads on a baking sheet and bake for 7–10 minutes, or until the edges are golden and slightly crisp.
  9. Serve warm or at room temperature.
