Description

This Za’atar-Roasted Chicken with Chickpeas is a bold, one-pan meal packed with Middle Eastern flavors. Juicy roasted chicken is infused with aromatic za’atar seasoning and paired with crispy chickpeas, making this dish hearty, healthy, and perfect for an easy weeknight dinner.


Ingredients

  • 68 chicken thighs or drumsticks
  • 3 tablespoons olive oil
  • 2 tablespoons za’atar seasoning
  • 3 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 red onion, sliced
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, whisk together olive oil, za’atar seasoning, garlic, lemon juice, lemon zest, salt, pepper, and paprika (if using).
  • Add chicken and toss to coat well. Let marinate for 15–30 minutes if time allows.
  • Spread chickpeas and sliced red onion on a baking sheet or roasting pan. Drizzle lightly with olive oil and season with a pinch of salt and pepper.
  • Place the marinated chicken on top of the chickpeas.
  • Roast for 35–45 minutes, or until the chicken is golden brown and cooked through (internal temp 165°F/75°C).
  • Broil for 2–3 minutes at the end for extra crispiness if desired.
  • Garnish with fresh parsley and serve with lemon wedges if desired.

  • Pat chicken dry before marinating for crispier skin.Boneless chicken can be used but will cook faster.
