Ingredients
- 1 can (400 g) chickpeas (or 1 1/2 cups cooked chickpeas), drained and rinsed
- 1 to 2 tablespoons olive oil
- 1 to 2 teaspoons za’atar spice blend
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika (optional)
Instructions
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Pat the chickpeas very dry using a clean kitchen towel or paper towels. Removing moisture is key for crispiness.
- Spread the chickpeas evenly on the baking sheet and roast for 20 minutes.
- Remove from the oven, drizzle with olive oil, and sprinkle with za’atar, garlic powder, salt, pepper, and paprika if using.
- Toss well to coat evenly.
- Return to the oven and roast for another 15 to 20 minutes, shaking the pan halfway through, until golden and crispy.
- Let cool slightly—they will continue to crisp up as they cool.
