Description

These Za’atar Spiced Crispy Chickpeas are a crunchy, oven-roasted snack packed with bold Middle Eastern flavors. Seasoned with aromatic za’atar and simple spices, this healthy chickpea recipe is perfect for snacking, salads, or adding a crispy topping to your favorite dishes.


Ingredients

  • 1 can (400 g) chickpeas (or 1 1/2 cups cooked chickpeas), drained and rinsed
  • 1 to 2 tablespoons olive oil
  • 1 to 2 teaspoons za’atar spice blend
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika (optional)

Instructions

  • Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  • Pat the chickpeas very dry using a clean kitchen towel or paper towels. Removing moisture is key for crispiness.
  • Spread the chickpeas evenly on the baking sheet and roast for 20 minutes.
  • Remove from the oven, drizzle with olive oil, and sprinkle with za’atar, garlic powder, salt, pepper, and paprika if using.
  • Toss well to coat evenly.
  • Return to the oven and roast for another 15 to 20 minutes, shaking the pan halfway through, until golden and crispy.
  • Let cool slightly—they will continue to crisp up as they cool.
  • Serve as a snack or use as a topping for salads and bowls
