Description

These Zaatar Spring Rolls are a crispy fusion appetizer filled with spinach, feta, mozzarella, and aromatic zaatar seasoning. Baked or fried until golden, this easy zaatar spring rolls recipe delivers bold Middle Eastern-inspired flavor in every crunchy bite.

Ingredients

  • 12 spring roll wrappers

  • 1 tablespoon olive oil

  • 1/2 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 cup fresh spinach, chopped

  • 1/2 cup feta cheese, crumbled

  • 1/2 cup mozzarella cheese, shredded

  • 1–2 teaspoons zaatar seasoning

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • Water or egg wash, for sealing

  • Olive oil for brushing (if baking)

Instructions

  • Heat olive oil in a skillet over medium heat.

  • Add the chopped onion and sauté for about 3 minutes until softened.

  • Stir in the minced garlic and cook for 30 seconds until fragrant.

  • Add the chopped spinach and cook briefly until wilted. Remove from heat and allow the mixture to cool slightly.

  • In a bowl, combine the spinach mixture with feta cheese, mozzarella cheese, and zaatar seasoning. Season with salt and black pepper and mix well.

  • Place a spring roll wrapper on a clean surface with one corner pointing toward you.

  • Spoon a small amount of filling near the bottom corner of the wrapper.

  • Fold the bottom corner over the filling, fold in the sides, and roll tightly to form a spring roll.

  • Seal the edge with a little water or egg wash.

  • Arrange the rolls on a baking sheet and brush lightly with olive oil.

  • Bake at 400°F (200°C) for 15–18 minutes until golden and crispy. Alternatively, fry in hot oil for 3–4 minutes until golden brown.

  • Serve warm with your favorite dipping sauce.

Notes

Keep unused spring roll wrappers covered with a damp towel to prevent them from drying out.Baking the rolls creates a lighter, crisp texture, while frying gives a deeper golden crunch. These rolls pair well with yogurt sauce, garlic sauce, tahini dip, or lemon yogurt dressing. For extra flavor, add fresh herbs like parsley or mint to the filling.Halloumi cheese can be used instead of mozzarella for a saltier, richer taste.
