Zucchini Tots are crispy, cheesy, veggie-packed bites made with shredded zucchini, cheese, and breadcrumbs. Baked until golden, they’re a nutritious and delicious alternative to traditional tater tots—perfect for snacking or as a side dish.
Ingredients
- 2 cups grated zucchini (about 2 medium zucchini), well-drained
- 1 large egg
- 1/2 cup shredded cheddar cheese
- 1/3 cup breadcrumbs (regular or panko)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 1 tbsp chopped parsley or green onions (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Grate zucchini and squeeze out as much liquid as possible using a clean towel or cheesecloth.
- In a large bowl, combine zucchini, egg, cheese, breadcrumbs, garlic powder, onion powder, salt, pepper, and optional herbs. Mix well.
- Scoop tablespoon-sized portions and shape into small oval tots using your hands.
- Place tots on prepared baking sheet.
- Bake for 18–22 minutes, flipping halfway through, until golden brown and crispy.
- Let cool slightly before serving with your favorite dipping sauce.
Notes
For extra crispiness, broil the tots for the last 1–2 minutes of baking.Air fryer method: Cook at 375°F (190°C) for 10–12 minutes, flipping once.Use gluten-free breadcrumbs to make this recipe gluten-free.Freeze after baking and reheat directly from frozen in the oven or air fryer.Serve with ranch, ketchup, or garlic aioli for dipping.
