Description

Zucchini Tots are crispy, cheesy, veggie-packed bites made with shredded zucchini, cheese, and breadcrumbs. Baked until golden, they’re a nutritious and delicious alternative to traditional tater tots—perfect for snacking or as a side dish.


Ingredients

  • 2 cups grated zucchini (about 2 medium zucchini), well-drained
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup breadcrumbs (regular or panko)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 1 tbsp chopped parsley or green onions (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Grate zucchini and squeeze out as much liquid as possible using a clean towel or cheesecloth.
  3. In a large bowl, combine zucchini, egg, cheese, breadcrumbs, garlic powder, onion powder, salt, pepper, and optional herbs. Mix well.
  4. Scoop tablespoon-sized portions and shape into small oval tots using your hands.
  5. Place tots on prepared baking sheet.
  6. Bake for 18–22 minutes, flipping halfway through, until golden brown and crispy.
  7. Let cool slightly before serving with your favorite dipping sauce.

Notes

For extra crispiness, broil the tots for the last 1–2 minutes of baking.Air fryer method: Cook at 375°F (190°C) for 10–12 minutes, flipping once.Use gluten-free breadcrumbs to make this recipe gluten-free.Freeze after baking and reheat directly from frozen in the oven or air fryer.Serve with ranch, ketchup, or garlic aioli for dipping.
