Ingredients
- 1 ½ cups all-purpose flour or whole wheat flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 tsp ground cinnamon
- 2 eggs
- 1 cup mashed ripe bananas
- ½ cup grated apple
- ½ cup grated carrot
- ½ cup brown sugar or honey
- ⅓ cup vegetable oil or melted butter
- 1 tsp vanilla extract

- Chopped walnuts or pecans

Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
- In a large bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl, mix eggs, mashed bananas, grated apple, grated carrot, sugar or honey, oil or butter, and vanilla extract.
- Add wet ingredients to dry ingredients and mix gently until just combined.
- Fold in any optional add-ins if desired.
- Divide batter evenly into muffin cups, filling about ¾ full.
- Bake for 18–22 minutes or until golden and a toothpick comes out clean.
- Cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Do not overmix to keep muffins light and tender.Use ripe bananas for natural sweetness.You can substitute honey or maple syrup for refined sugar.Add yogurt for extra moisture if desired.
