Description

This Almond Rice Pilaf is a light, fluffy, and flavorful side dish made with tender rice, toasted almonds, and savory aromatics. With its buttery texture and delicate crunch, this easy almond rice pilaf recipe is perfect for pairing with chicken, fish, or vegetables.


Ingredients

  • 1 cup long-grain rice (basmati or jasmine)
  • ⅓ cup sliced almonds
  • 2 tbsp butter or olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • Salt, to taste
  • Black pepper, to taste

Optional additions:

  • Fresh parsley, chopped
  • 1 tsp lemon zest or a squeeze of lemon juice
  • ¼ cup raisins or dried cranberries
  • ½ tsp cumin or a pinch of cinnamon

Instructions

  • Rinse rice under cold water until clear, then drain well.
  • In a large pan, toast sliced almonds over medium heat until golden. Remove and set aside.
  • In the same pan, melt butter or heat olive oil.
  • Add chopped onion and cook until soft and translucent.
  • Stir in garlic and cook until fragrant.
  • Add rice and toast lightly for 1–2 minutes, stirring to coat.
  • Pour in broth and season with salt and pepper.
  • Bring to a boil, then reduce heat to low, cover, and simmer until rice is tender and liquid is absorbed.
  • Remove from heat and let rest, covered, for 5 minutes.
  • Fluff rice with a fork and stir in toasted almonds and optional additions
