Description

Ambrosia Eton Mess is a quick and refreshing no-bake dessert made with crushed meringue, fresh fruit, and creamy custard or whipped cream. This ambrosia eton mess recipe is light, fruity, and perfect for an easy sweet treat or last-minute gathering

Ingredients

  • 46 meringue nests, crushed
  • 1 cup strawberries, sliced
  • 1 cup mandarin oranges or mixed fruit (drained if canned)
  • 1 cup whipped cream or ready-made custard (such as Ambrosia custard)
  • ½ cup mini marshmallows
  • ¼ cup shredded coconut (optional)
  • 1 teaspoon vanilla extract
  • Optional: 1–2 tablespoons powdered sugar (to taste)

Instructions

  • In a large bowl, whip the cream if using fresh cream, and add vanilla extract.
  • Add sliced strawberries and drained fruit to the bowl.
  • Fold in mini marshmallows and optional shredded coconut.
  • Gently crush the meringue nests and fold them into the mixture.
  • Add custard if using and gently combine without overmixing.
  • Taste and add powdered sugar if additional sweetness is desired.
  • Spoon into serving bowls or glasses.
  • Serve immediately or chill briefly before serving.

Notes

  • Best served fresh to keep the meringue crisp.
  • Avoid overmixing to maintain texture.
  • Swap fruits like berries, pineapple, or kiwi for variation.
  • Use yogurt or low-fat cream for a lighter version.
  • Add crushed biscuits or chocolate for extra texture and flavor.
