Ingredients

  • 3 ripe bananas (mashed)
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter (melted) or oil
  • 2 eggs
  • 1/2 cup milk
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

For the Lemon Icing:

  • 1 cup powdered sugar
  • 23 tablespoons lemon juice
  • 1 teaspoon lemon zest

Instructions

  • Preheat oven to 180°C (350°F) and line a muffin tin with paper liners.
  • Mash bananas in a bowl until smooth.
  • In another bowl, mix eggs, sugar, brown sugar, and melted butter or oil until well combined.
  • Stir in mashed bananas, milk, and vanilla extract.
  • In a separate bowl, whisk flour, baking soda, baking powder, and salt.
  • Gradually add dry ingredients to wet mixture, stirring until just combined.
  • Divide batter evenly into muffin cups, filling each about 3/4 full.
  • Bake for 18–22 minutes, until a toothpick inserted comes out clean.
  • Allow muffins to cool completely.
  • Mix powdered sugar, lemon juice, and lemon zest to make icing.
  • Drizzle icing over cooled muffins and let set before serving.

Notes
