Description

These chipotle chicken tostadas are a bold, smoky, and satisfying Mexican-inspired dish featuring crispy tostada shells topped with spicy chipotle chicken and fresh, vibrant toppings. Perfect for quick dinners, entertaining, or customizable family meals.


Ingredients

  • Chicken breast or thighs, cooked and shredded
  • Chipotle peppers in adobo sauce
  • Olive oil
  • Garlic, minced
  • Lime juice
  • Ground cumin
  • Paprika
  • Salt
  • Black pepper
  • Tostada shells
  • Refried beans
  • Lettuce, shredded
  • Tomatoes, diced
  • Red onion, finely chopped
  • Avocado, sliced
  • Fresh cilantro, chopped
  • Sour cream or crema
  • Crumbled cheese (such as queso fresco)

Instructions

  • In a blender or food processor, combine chipotle peppers, adobo sauce, olive oil, garlic, lime juice, cumin, paprika, salt, and pepper. Blend until smooth.
  • Heat a skillet over medium heat. Add shredded chicken and chipotle sauce, cooking for 5–7 minutes until heated through and well coated.
  • Warm refried beans in a saucepan or microwave until smooth.
  • Spread a layer of refried beans over each tostada shell.
  • Top with chipotle chicken, followed by lettuce, tomatoes, red onion, avocado, and cilantro.
  • Finish with sour cream or crema and crumbled cheese.
  • Serve immediately while tostadas are crisp.
