Ingredients
- 1 cup rolled oats
- 1/2 cup dried cranberries
- 1/2 cup dark chocolate (melted)
- 1 cup dates (pitted)
- 2 tablespoons coconut oil
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Add rolled oats to a food processor and pulse until they form coarse crumbs.
- Add dates and dried cranberries, then blend until the mixture starts to come together.
- Melt the dark chocolate gently and add it to the mixture along with coconut oil, cocoa powder, vanilla extract, and salt.
- Blend again until a sticky dough forms.
- Scoop small portions and roll into bite-sized balls using your hands.
- Place on a tray lined with parchment paper.
- Refrigerate for at least 30 minutes until firm.
