Instructions
- If using fresh spinach, cook until wilted, then drain, squeeze out excess moisture, and chop.
- If using frozen spinach, thaw completely and squeeze out excess liquid.
- Melt butter in a large skillet over medium heat.
- Add onion or shallot and cook until softened, then stir in garlic.
- Sprinkle in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in milk and heavy cream until smooth.
- Add cream cheese and stir until melted and incorporated.
