Ingredients

- 4 cups vegetable or chicken broth
- ½ cup heavy cream or half-and-half
- 1 cup milk
- 1 teaspoon fresh or dried thyme

Instructions
- In a large pot, heat butter and olive oil over medium heat.
- Add sliced mushrooms and cook for 8–10 minutes until browned and their moisture has evaporated.
- Add chopped onion and cook for about 5 minutes until softened.
