Description

Creamy Pasta Primavera is a rich and comforting pasta recipe loaded with fresh vegetables and tossed in a velvety Parmesan cream sauce. Perfect for busy weeknight dinners or cozy family meals, this colorful pasta dish is easy to customize and packed with delicious flavor.


Ingredients

pasta
broccoli florets
bell peppers
zucchini
carrots
cherry tomatoes

heavy cream
Parmesan cheese

Italian seasoning

Instructions

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente.
  • Reserve a small amount of pasta water, then drain the pasta and set aside.
  • In a large skillet, heat olive oil and butter over medium heat.
  • Add chopped onion and garlic and sauté until fragrant and softened.
  • Stir in broccoli, bell peppers, zucchini, and carrots. Cook for several minutes until the vegetables are tender-crisp.
  • Add cherry tomatoes and cook for another 2 minutes.
  • Pour in the vegetable broth and heavy cream, stirring well to combine.
  • Add Italian seasoning, salt, and black pepper.
  • Stir in the Parmesan cheese until the sauce becomes smooth and creamy.
  • Add the cooked pasta to the skillet and toss until evenly coated. Add a splash of reserved pasta water if needed to loosen the sauce.
  • Garnish with fresh parsley and extra Parmesan before serving.

Notes

Use seasonal vegetables for the best flavor and freshness. Add grilled chicken, shrimp, or salmon for extra protein. If reheating leftovers, add a splash of milk or broth to maintain the creamy texture. Freezing is not recommended due to the cream-based sauce
