Ingredients

  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Add the Italian sausage and cook until browned and fully cooked, breaking it into crumbles as it cooks.
  • Stir in diced onion and cook until softened.
  • Add minced garlic and cook for about 30 seconds until fragrant.
  • Pour in the chicken broth and bring to a gentle simmer.
  • Add sliced potatoes and cook until tender, about 15 to 20 minutes.
  • Stir in the kale and cook until wilted.
  • Reduce the heat to low and slowly stir in the heavy cream.
  • Add crushed red pepper flakes, salt, and black pepper to taste.

Notes

For extra heat, use spicy Italian sausage or additional red pepper flakes. Spinach can be substituted for kale if preferred. To lighten the soup, use turkey sausage and half-and-half instead of heavy cream. Avoid boiling after adding the cream to maintain a smooth and creamy texture.
