Ingredients
- 800g potatoes (Yukon Gold or red potatoes preferred)
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 2 cloves garlic (finely minced)
- ¼ cup fresh parsley (finely chopped)
- 1 tsp lemon zest
- 1–2 tsp lemon juice
Instructions
- Preheat oven to 220°C (425°F).
- Wash and cut potatoes into evenly sized chunks. Pat them completely dry.
- Toss potatoes with olive oil, salt, and pepper.
- Spread in a single layer on a baking sheet without overcrowding.
- Roast for 35–45 minutes, flipping halfway, until golden and crispy.
- While roasting, prepare gremolata by mixing parsley, garlic, lemon zest, and lemon juice.
- Remove potatoes from oven and immediately toss with gremolata.
- Serve warm.
