Ingredients

  • 800g potatoes (Yukon Gold or red potatoes preferred)
  • 3 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cloves garlic (finely minced)
  • ¼ cup fresh parsley (finely chopped)
  • 1 tsp lemon zest
  • 12 tsp lemon juice

Instructions

  • Preheat oven to 220°C (425°F).
  • Wash and cut potatoes into evenly sized chunks. Pat them completely dry.
  • Toss potatoes with olive oil, salt, and pepper.
  • Spread in a single layer on a baking sheet without overcrowding.
  • Roast for 35–45 minutes, flipping halfway, until golden and crispy.
  • While roasting, prepare gremolata by mixing parsley, garlic, lemon zest, and lemon juice.
  • Remove potatoes from oven and immediately toss with gremolata.
  • Serve warm.
