Ingredients

  • Sweet potatoes, scrubbed clean
  • Olive oil
  • Garlic, minced
  • Salt
  • Black pepper
  • Grated Parmesan cheese
  • Paprika (optional)
  • Fresh parsley, chopped (optional)

Instructions

  • Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Bring a large pot of salted water to a boil. Add sweet potatoes and cook until fork-tender (15–20 minutes).
