Description

This Easy Chicken Fried Rice is a quick and flavorful one-pan meal made with tender chicken, fluffy rice, and mixed vegetables tossed in a savory sauce. Ready in under 30 minutes, this takeout-style chicken fried rice recipe is perfect for busy weeknights.


Ingredients

  • 3 cups cooked rice (preferably cold, day-old)
  • 1 lb boneless, skinless chicken breast or thighs, diced
  • 2 eggs
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • ½ small onion, chopped
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • Salt, to taste
  • Black pepper, to taste

Optional additions:

  • Green onions, chopped
  • Chili flakes or hot sauce
  • 1 tsp fresh ginger, minced

Instructions

  • Heat a large pan or wok over medium-high heat and add oil.
  • Add diced chicken and cook until golden and fully cooked. Remove and set aside.
  • In the same pan, scramble the eggs, then remove and set aside with the chicken.
  • Add garlic and onion; sauté until fragrant.
  • Stir in mixed vegetables and cook until heated through.
  • Add cooked rice, breaking up clumps, and stir well.
  • Return chicken and eggs to the pan.
  • Add soy sauce, oyster sauce, and sesame oil; mix thoroughly.
  • Cook for a few minutes, stirring, until heated through and slightly crispy.
  • Season with salt and pepper, garnish with green onions if desired, and serve hot
