Ingredients
- 3 cups cooked rice (preferably cold, day-old)
- 1 lb boneless, skinless chicken breast or thighs, diced
- 2 eggs
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- ½ small onion, chopped
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- Salt, to taste
- Black pepper, to taste
Optional additions:
- Green onions, chopped
- Chili flakes or hot sauce
- 1 tsp fresh ginger, minced
Instructions
- Heat a large pan or wok over medium-high heat and add oil.
- Add diced chicken and cook until golden and fully cooked. Remove and set aside.
- In the same pan, scramble the eggs, then remove and set aside with the chicken.
- Add garlic and onion; sauté until fragrant.
- Stir in mixed vegetables and cook until heated through.
- Add cooked rice, breaking up clumps, and stir well.
- Return chicken and eggs to the pan.
- Add soy sauce, oyster sauce, and sesame oil; mix thoroughly.
- Cook for a few minutes, stirring, until heated through and slightly crispy.
- Season with salt and pepper, garnish with green onions if desired, and serve hot
