Gambas Al Ajillo (Spanish Garlic Shrimp) is a classic tapas dish made with juicy shrimp sautéed in garlic-infused olive oil and a hint of chili. Ingredients
- 1 lb (450g) raw shrimp, peeled and deveined
- ¼ cup olive oil
- 5–6 garlic cloves, thinly sliced
- ½ tsp red pepper flakes or 1 fresh chili, sliced
- ½ tsp paprika (smoked or sweet)
- Salt, to taste
- Black pepper, to taste
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
Instructions
- Heat olive oil in a wide skillet over medium heat.
- Add sliced garlic and cook gently until fragrant and lightly golden (do not burn).
- Stir in red pepper flakes (or chili) and paprika to infuse the oil.
- Add shrimp in a single layer and cook for 1–2 minutes per side until pink and opaque.
- Season with salt and black pepper.
- Drizzle with lemon juice and remove from heat.
- Sprinkle with fresh parsley and serve immediately.
