Description

Gambas Al Ajillo (Spanish Garlic Shrimp) is a classic tapas dish made with juicy shrimp sautéed in garlic-infused olive oil and a hint of chili. This quick and easy Spanish recipe is packed with bold Mediterranean flavors and is perfect as an appetizer or light main course, especially when served with crusty bread.


Ingredients

  • 1 lb (450g) raw shrimp, peeled and deveined
  • ¼ cup olive oil
  • 56 garlic cloves, thinly sliced
  • ½ tsp red pepper flakes or 1 fresh chili, sliced
  • ½ tsp paprika (smoked or sweet)
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice

Instructions

  • Heat olive oil in a wide skillet over medium heat.
  • Add sliced garlic and cook gently until fragrant and lightly golden (do not burn).
  • Stir in red pepper flakes (or chili) and paprika to infuse the oil.
  • Add shrimp in a single layer and cook for 1–2 minutes per side until pink and opaque.
  • Season with salt and black pepper.
  • Drizzle with lemon juice and remove from heat.
  • Sprinkle with fresh parsley and serve immediately.

Notes

Keep heat moderate to avoid burning garlic.Do not overcook shrimp—they cook very quickly.Add a splash of white wine for extra depth of flavor.Serve with crusty bread to soak up the flavorful oil.
