Description

This Gluten-Free Cauliflower Gnocchi is a light, tender, and healthy twist on classic gnocchi. Made with wholesome cauliflower and simple ingredients, this easy recipe delivers a delicate texture and mild flavor that pairs perfectly with your favorite sauces. Ideal for gluten-free diets, it’s a comforting yet nutritious dish for any occasion.

Ingredients

  • 3 cups cauliflower florets
  • 1 cup gluten-free flour blend (plus extra for dusting)
  • 1 large egg
  • ½ cup parmesan cheese, grated
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Steam or boil cauliflower florets until very tender. Drain thoroughly and let cool slightly.
  • Mash or process the cauliflower until smooth, removing as much excess moisture as possible.
  • Transfer to a mixing bowl and add egg, parmesan, salt, and pepper. Mix until combined.
  • Gradually add gluten-free flour until a soft, workable dough forms (not too sticky).
  • Lightly flour a clean surface. Divide dough into portions and roll into long ropes.
  • Cut into small bite-sized pieces. Optionally press with a fork to create ridges.
  • Bring a pot of salted water to a boil. Cook gnocchi in batches until they float to the surface.
  • Remove with a slotted spoon.
  • (Optional) Heat a skillet with oil or butter and pan-fry gnocchi until golden and slightly crispy.
  • Serve warm with your favorite sauce.

Notes

Remove as much moisture as possible from cauliflower to avoid sticky dough.Add extra flour gradually if needed, but avoid overworking the dough.Pan-frying adds a crispy texture, but boiling alone keeps them soft and tender.Works well with pesto, marinara, or garlic butter sauces.
