Ingredients
- 1 lb carrots, peeled and trimmed
- 2 tbsp harissa paste
- 2 tbsp honey
- 2 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
- ½ cup feta cheese, crumbled
- ¼ cup pistachios, roughly chopped
- 1 tsp lemon zest
- 1–2 tbsp lemon juice
- 2 tbsp fresh parsley or cilantro, chopped (optional)
Instructions
- Preheat oven to 200°C (400°F).
- Arrange carrots on a baking sheet.
- In a bowl, mix harissa, honey, olive oil, salt, and pepper.
- Toss carrots with the mixture until evenly coated.
- Spread in a single layer.
- Roast for 25–30 minutes, turning halfway, until tender and caramelized.
- Transfer to a serving dish.
- Sprinkle with crumbled feta and chopped pistachios.
- Finish with lemon zest, lemon juice, and fresh herbs if desired.
- Serve warm or at room temperature.
