Description

Harissa honey carrots with feta, pistachios, and lemon is a bold and flavorful roasted vegetable dish featuring sweet caramelized carrots glazed with spicy harissa and honey. Ingredients

  • 1 lb carrots, peeled and trimmed
  • 2 tbsp harissa paste
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste
  • ½ cup feta cheese, crumbled
  • ¼ cup pistachios, roughly chopped
  • 1 tsp lemon zest
  • 12 tbsp lemon juice
  • 2 tbsp fresh parsley or cilantro, chopped (optional)

Instructions

  • Preheat oven to 200°C (400°F).
  • Arrange carrots on a baking sheet.
  • In a bowl, mix harissa, honey, olive oil, salt, and pepper.
  • Toss carrots with the mixture until evenly coated.
  • Spread in a single layer.
  • Roast for 25–30 minutes, turning halfway, until tender and caramelized.
  • Transfer to a serving dish.
  • Sprinkle with crumbled feta and chopped pistachios.
  • Finish with lemon zest, lemon juice, and fresh herbs if desired.
  • Serve warm or at room temperature.
